The Staff

Fresh Meat

Malcolm Spendlow has a butchery and bakery background with experience of the hotel and guest house industry. He also has an active role within Louth’s Playgoers Theatre. He is on hand to give advice on a wide range of complimentary products to enhance your food preparation.  Malcolm started his work in the meat trade with Barry Mountain at the corner of Mercer Row.  His brother also worked there with him.

Paul Wright has also worked within the meat industry for many years, having experience of independent and supermarket outlets. He is kept busy attending to orders from personal customers as well as catering clients. He discusses and prepares orders for our mail order customers who place orders by phone.  Paul actively works on product development, producing many savoury and marinated meat dishes. 

Tina, abley assists Paul in preparing orders.  Receiving calls for our customers she packs and prices your orders. 

Mike Thornalley joined Lakings in 2004. He previously ran a successful local village butchers shop. He is well known to a lot of our customers and brings a wealth of local knowledge to Lakings.

Bill Wright joins us with many years of experience at home and abroad.  He has been in the meat trade since leaving school.  He now returns to the meat trade in Louth.  Bill also works on creative new meat dishes.

Chris Smith is a third generation butcher, following his grand father and father into the trade.  Chris often addresses Woman's Institutes and other Ladies meetings.  Here he shares his knowledge and experiences with his audience.  

The counter is also staffed by our knowledgeable female staff. Blin has worked within the food industry for many years. She has the experience of fresh meat preparation to share with our customers. 
Emma & Chloe can be found on the Meat counter, offering there own youthful outlook into fresh meat choice.  They can share her own ideas into recent cullinary conquests.

Cooked Meats & Pastries

Jane, Jo, Shirley, Wendy & Mick are on hand to serve you at the counter. They can advise you on your catering needs for that special occasion or your everyday shopping.

The Sandwich Bar

Abi, Rachel, Pat and Chloe are available to serve you in our successful Sandwich Bar. Hot Beef or Pork Sandwiches as well as cold meat and salad buns are available daily. Salad pots are filled to your personal requirements while you wait.

Fresh Meat Preparation

Jim Bee has a family background in the Meat Trade and has worked in the livestock production industry.

He attends the local market to select best quality stock for our customers. He prepares beef for the shop as well as for our pie and pastry department.

Terry Frankish has worked for many years within the meat industry. He has experience of abattoir production and the wholesale meat trade. He presently prepares pork for the shop as well as hams for cooking. He also prepares a wide range of other meats to be sold on the cooked meat counter. The preparation of our Renowned Lincolnshire Sausages also comes under his control. 

Jason Lovely now enters his third year as butchery trainee and works closely with Terry and Jim to gain knowledge of clean and accurate preparation.

Brenda, who is immediate family, ably assists with sausage production and keeps the "boys" under control.

The Bakery

Tony Coddington heads the team of five. He has worked within the local bakery industry most of his life. Tony ran his own bakery and confectionery business in the 80’s and 90’s. Tony has brought many skills and ideas to Lakings. Our bread production has been so successful that they are constantly struggling to keep up with demand.

Tony is assisted by his wife, Mandy, Doug, Alan and Craig. The team bring experience of a college education, the armed forces, supermarket trading and self employment to enhance the bakery’s skills.

Buffets/Ready Meal Department

Pauline & Jean lead the department and offer a wealth of knowledge of the preparation of fresh desserts. They have been a very successful product range. The department also supports the Sandwich Bar with salads, individual desserts and fresh soup. The preparation of ready meals is also a growth area and proving very popular. Meals are displayed in oven proof and microwavable containers. The preparation of buffets for all occasions is also part of this department’s work.

Blin, makes up the team. 

Our  student staff include Kelly & Lauren.  They are to be found on the counter or preparing bakery and cooked products for sale.  Welcome Alex, (13GCSE's he hopes)  he joins us in the background

 

Transport.

Sharon is our delivery driver.  She travels north, east, south and west to fulfill the needs of our wholesale customers.  She delivers to village stores and Post Offices within a 10 mile radius of Louth. 
Sharon,  may also be found behind the counter as well. 

 

Office

In our office is Sally who answers your calls or re-directs you to the appropriate department. Sally is a member of the "family" and has worked in all departments since joining the firm after completing a food and catering course in her teens. Tracey is also at the end of the phone to take your calls and process the paper work.
